Pergamino is Medellín’s best-known specialty coffee name and it roasts what it serves. That is the difference between it and most of the pretty cafés around Provenza: the sourcing and the roasting are the business, and the café is where you taste the result.
The group has expanded hard — around eleven cafés across Medellín including two at the airport — and one of the newest, in the Wake bio-hotel building, is the first to put a roaster in the room as part of the customer experience.
The Vía Primavera branch is the one to aim for if you want the flagship: outdoor seating, dog friendly, free WiFi, wheelchair accessible, and a proper breakfast menu rather than just pastries.
Drink it, then take it home
Order the filter if you want to taste what the roast is doing; the espresso menu is solid but the brewed coffee is where a roaster shows its hand. Breakfast is served properly, and the kitchen is vegetarian-friendly with vegan options.
The other reason to come is beans. Pergamino sells its own roasted coffee to take away, which is a considerably better Medellín souvenir than anything you will find on the tourist racks around the park.
